Well known Spanish chef José Pizarro has revealed a new menu dedicated to olives, having taken inspiration from the launch of his own brand extra virgin olive oil.
On arrival guests can enjoy a JP Sour – José Pizarrooliveoil, Gin Mare, Angostura bitters, egg white, basil, freshy squeezed lemon juice and homemade syrup.
The three-course menu starts with a refreshing bowl of Salmorejo – a thick, chilled soup which originates from Cordoba, in the southern region of Spain. The dish has been given a José twist and has been made with puréed tomatoes, strawberries, capers, pickled onions and José Pizarro olive oil.
For the main course one of Spain’s best-kept gastronomic secrets will be served, Presa Iberica 5J – 100% acorn fed Ibérico Jamón with José Pizarro olive oil. The pigs are reared on acorns and are thoroughly spoilt, resulting in meat that is tender and full of flavour.
To finish, guests can indulge in a rich Chocolate Pot made with José Pizarro olive oil and salt.
Fondly known to many as the Godfather of Spanish cooking, José said: “I wanted to show our guests that a good quality extra virgin olive oil can be enjoyed in many different ways. The menu is simple but delicious, and highlights the versatility of the oil. It is amazing that something so simple can change the taste of a dish with a simple drizzle.”
José Pizarro’s extra virgin olive oil has an intensely fruity nose with hints of green apple and grass, and the palate is smooth, sweet yet spicy with a slightly bitter finish.
The new olive oil originates from José’s home town, Extremadura and is produced from the famous Morisca variety – only 3% of the olive trees in Spain grow this varietal. The olives are picked using the traditional method known as “brucatura”, in which the olives are hand-picked using ladders to reach the higher branches. This method ensures that the olives aren’t bruised by falling to the ground. It guarantees the best possible quality and the highest level of antioxidants and polyphenols, which offer numerous health-protective and strong anti-inflammatory benefits.
